Sizzle into Summer with Healthy Low-Carb Chicken Kabobs
Summer is the perfect season to fire up the grill, enjoy fresh ingredients, and keep meals light, flavourful, and fitness-friendly. If you’re looking for a delicious way to stay on track with your health goals while still enjoying backyard BBQs, chicken kabobs are a must-try. They’re quick to prep, easy to customize, and packed with lean protein and fresh veggies—making them ideal for anyone following a low-carb or balanced lifestyle.
Here are two of my favorite low-carb chicken kabob recipes that are bursting with flavour and nutrition.
Mediterranean Herb Chicken Kabobs
Fresh, herby, and zesty—these kabobs are a Mediterranean-inspired win.
Ingredients (Serves 4):
- 1 lb boneless, skinless chicken breast, cut into 1.5” cubes
- 1 medium zucchini, sliced into rounds
- 1 red bell pepper, cut into 1.5” chunks
- 1/2 red onion, cut into wedges
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt & pepper to taste
- Wooden skewers (soak in water 30 min before grilling)
Instructions:
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
- Add chicken cubes and toss to coat. Marinate for at least 30 minutes (up to 4 hours).
- Thread chicken and veggies onto skewers, alternating pieces for variety.
- Preheat grill to medium-high heat. Grill skewers for 10–12 minutes, turning occasionally, until chicken reaches 165°F internally.
- Serve hot with a side salad or cauliflower rice for a full low-carb meal.

Spicy Coconut-Lime Chicken Kabobs
This tropical-inspired kabob has a little kick and a lot of flavour, with healthy fats and bold seasoning.
Ingredients (Serves 4):
- 1 lb boneless, skinless chicken thighs, cut into chunks
- 1 cup unsweetened canned coconut milk
- Juice of 1 lime + 1 tsp lime zest
- 1 tbsp coconut aminos or low-sodium soy sauce
- 1 tsp chili garlic paste (adjust to taste)
- 1/2 tsp ground turmeric
- 1/2 tsp paprika
- 1 small green bell pepper, chopped
- 1/2 small red onion, chopped
- Fresh cilantro for garnish (optional)
- Wooden skewers (soaked if using wood)
Instructions:
- In a bowl, whisk together coconut milk, lime juice/zest, coconut aminos, chili paste, turmeric, and paprika.
- Add chicken to the marinade, cover, and refrigerate for at least 2 hours or overnight.
- Thread marinated chicken and veggies onto skewers.
- Grill over medium-high heat for about 12–14 minutes, turning occasionally until cooked through.
- Garnish with cilantro and serve with grilled asparagus or a side of avocado cucumber salad.
